I also wasn't in the mood to make a pie crust, so I went with a homemade apple crisp, knowing it was a little more whole food friendly. The craving was satisfied and we make this often when we have a few apples that didn't get the attention they deserved. It has become one our favorite desserts.
You don't have to wait for your apples to go soft, feel free to use fresh apples just picked up from the store and while you there grab a lemon and add the zest and a little lemon juice to your apples to take the flavor to the next level. It's a perfect date night at home dessert. Having two additional guests? Just double the recipe.

- Prepare Apple Filling: Thoroughly clean and dry the apples. Slice them thinly using a mandoline, cheese grater slicer side, or a vegetable peeler. Don't worry about removing the skin. Place the shaved apple pieces in a medium-sized bowl. Add coconut sugar, cinnamon, fine sea salt, arrowroot powder, currants or raisins, and ½ tablespoon of avocado oil or coconut oil. Toss the apple mixture until well combined. Transfer the mixture to a small oiled baking dish or ramekins for individual servings.
- Make Crumble Topping: In the same bowl used for the apples, combine old-fashioned oats, whole wheat pastry flour, coconut sugar, fine sea salt, slivered almonds, cinnamon, and ¼ cup of avocado oil or coconut oil. Mix until the oil is well incorporated into the dry ingredients. Pour the crumb topping evenly over the apples.
- Bake: Preheat your oven to 375 degrees Fahrenheit. Place the baking dish in the oven and bake for 15 minutes until the top turns golden brown and the apples soften. Remove from the oven and allow it to cool for about 10 minutes.
