Crispy flautas are typically made with flour tortillas but in some places you will see corn tortillas being used. In this recipe, I use Siete Almond Flour Tortillas, to keep the recipe grain free and Autoimmune Protocol (AIP) Friendly.

Shredded Beef and Broccoli
You may be asking why a flauta and not a rolled taco or taquito? To me if it's made with a flour tortilla it is a flauta, if it's made with a corn tortilla it is a rolled taco, taquito or a taco dorado. Though dated back to Indigenous cuisine, where only corn was used, modern day flautas will typically be made with a flour tortilla.

Ingredients
Shredded Beef Filling:
- Avocado oil or Olive oil (or other cooking oil)
- Onions, diced
- Serrano pepper, diced
- Shredded beef, cooked
- Ground cumin
- Chili powder
- Garlic granules or powder
- Mexican oregano
- Sea salt
- Black pepper
- 10 oz can diced tomatoes with jalapeño and cilantro, drained
- Fresh lime juice
Flautas:
- Shredded cheese (cheddar cheese, Monterey jack cheese, pepper jack cheese, or a mix will work)
- 8 Siete Almond flour tortilla
Favorite Toppings:
- Sour cream
- Mexican Crema
- Pico de Gallo
- Queso Fresco
- Cotija Cheese
- Fresh cilantro
- Hot Sauce

Instructions
Stovetop:
- Heat a large skillet over medium heat. Add cooking oil, onion and pepper. Cook until soft.
- Add shredded beef and spices. Stir spices into the beef mixture and cook for about 45 seconds.
- Add your drained tomatoes and lime juice and stir into the beef mixture. Turn off the heat.
- Add cheese and stir into the mixture. Set aside to cool while you heat up your tortillas.
- Heat up tortillas until warm and pliable.
- Fill tortillas with 2 to 3 tablespoons of beef filling and roll into a cigar shape.
- Place a clean large skillet over medium-high heat. Add cooking oil. Once heated (about 2 minutes) add the rolled taco in an even layer with room in between each flauta to the hot oil, you may need to do this in batches. Turn heat down to medium and fry the flautas until golden brown on each side. Place on a baking sheet with a layer of paper towels, seam side down. Set crispy beef flautas aside until all flautas are cooked.
Air Fryer Flautas:
- Heat a large skillet over medium heat. Add cooking oil, onion and pepper. Cook until soft.
- Add shredded beef and spices. Stir spices into the beef mixture and cook for about 45 seconds.
- Add your drained tomatoes and lime juice and stir into the beef mixture. Turn off the heat.
- Add cheese and stir into the mixture. Set aside to cool while you heat up your tortillas.
- Warm tortillas until pliable in a damp paper towel in the microwave at 30 second intervals and flip over up to 4 times depending on microwave power.
- Fill tortillas with 2 to 3 tablespoons of beef filling and roll into a cigar shape.
- Place seam side down into air fryer basket. Lightly coat with cooking oil or cooking spray.
- Preheat air fryer to 375 degrees. Air fry for 5 minutes. Turn flautas over and air fry for 3 minutes.
To plate, put 2 - 3 of the shredded beef flautas to a plate. Top with shredded lettuce and other choice of toppings.
- Toppings: shredded lettuce, tomatoes, green onions, olives, cheese, jalapeños, tomatoes, plain yogurt, sour cream, or anything else that sounds good to you.
Substitutions
- Tortillas - you can use any type of tortilla, just make sure it is pillable before filling it.
- Shredded beef - any type of cooked meat can be substituted here. Just be aware of salt content and taste test along the way.
- Canned tomatoes - sub with two medium sized tomatoes, diced.
Variations
- Spicy - add an additional serrano and leave seeds and vein intact
- Deluxe - serve with homemade salsa and guacamole
- Kid friendly - let the kiddos add their own toppings for an interactive dinner experience

Storage
Store the wet ingredients (lettuce, tomato, onion) separately from the dry ingredients (buns) in the fridge, and recombine when ready. Good for 2-3 days.
These ingredients do/don't stand up well to freezing for X days/weeks/months.
